Default Meat glue

Comment: A video I recently received can scare the whatchacallit out of
everybody..,. It talks about a special glue used to glue together meat
cuts to make them look like filets or roasts.

Is this video true? Or is it just one wannabe’s ego trip?

I do not see why it would not be true. Though I do think they over doing it a bit. Transglutaminase has been around for a long time (late 50's?) and used in a lot of processed meats to bind and improve texture. The reason you do not wish to breath it or touch it has to do with it being a protein bond agent and coagulation. Breath it in and glue your innards together. The reason it need to be labeled is that meat glued together need to be cooked like hamburger.

The video is not talking about the US where it is required to be labeled. I did not catch what country this story is from.

Today Tonight is one of our tabloid current affairs shows - the presentation of the story is actually rather restrained for them - only a few conspiracy theories. About the only real problem that I could see is the issue of cooking it rare with the potential for food poisoning. Well, that and honesty in labelling.

I liked how he tasted it and said he couldn't spot any difference. Kind of subverts the story.

But meat glue has been around for ages and used with extruded or recovered meat when a carcase has been processed.
