Default What to do with left over cream cheese filling

I made these Marbled Brownies just a bit ago (they look yummy!). I doubled the recipe since I was using a larger pan than called for and I also doubled the cream cheese topping that you used to marble them with. Discovered I didn't really need to do that and now have a good two cups of the stuff left over. Any ideas what to do with it? Recipes? It's sitting in the fridge now but I have no idea how long it will keep.

Ooh, I love marbled brownies... I haven't had any left over, but a similar filling is very good in cakes, especially with lemon juice added. Although if you have brownies you might not want any more cake.

Well the brownies are going to work with Mr. Gibbie tomorrow and most likely none will come back, so cake would be welcome.

Seriously though, I would make cream cheese stuffed french toast. Super yummy. I could eat that all day long.

I suppose bathing in it/using it as a massage cream is out of the question?

Turn on your favorite movie, grab a spoon and the bowl and eat it. YUMMY!

I don't like regular cake so my mom would make me a homemade cheesecake for my b-day every year. I always ate the filling and left the crust. One year she handed me the bowl of filling. After we stopped laughing she finished making the cheesecake.

How about using some on top of bagels? ETA: Ouch, spanked by bjohn!

Two cups would make some awesome individual cheesecakes too, if only I could find the recipe for graham cracker crusts...

Crush graham crackers. Add a couple tablespoons of sugar. Add enough melted butter, margarine or shortening to help bind loosely together (should be about like sandcastle-building sand). Press into bottom of whatever you'd like to use for a baking dish and fill. Bake until middle is barely set (you may want to use a water bath, especially with smaller dishes.) Cool and devour!

Some Chili, re-fried beans, a touch of salsa, and some chedder.

Cream Cheese goes on the bottom.
Refried beans next.
Chili

Bake for about 20 minutes.
Add a light layer of salsa
top with cheddar cheese
Bake until Cheddar is melted.

Dig in with tortilla chips.

Great stuff.

Don't bother with the graham crust. Too much work for too little taste payoff, IMO. For my individual cheesecakes, I put a cookie on the bottom. I have made them with oreos, vanilla sandwich cookies, Girl Guide mint cookies (the Cdn ones) and chocolate chip cookies on the bottom. Much quicker and the base never falls apart, as graham sometimes can.

I've opted for little cheese cake tartlets. They're in the oven now, I'll let you all know how they turn out. i did use the graham cracker crust because I like it. Put a big spoonful of the crust mixture into the bottom of the muffin tin and smooshed it down with a measuring cup. Of course because I have no real sense of scale, I now have a bowful of graham cracker crust left over.

So Toasty, while I agree that cream cheese with chili and chips would be good, this mixture I had I'd already sweetened. So, errrr, no, thanks.

I think the "bathing in it" option, which wasn't explored with the filling, is still available for experimentation.

The cheese cakelettes turned out tasty. Less dense than traditional cheese cake but yummy nonetheless.

I think the bathing in it option may have been explored if Mr. Gibbie were more a fan of cheese cake.
