Default Slow cooker question

DH and I got a slow cooker from his office for our wedding. Since he has hearings every night this week, I'd like to make something that tastes like it took hours to make, without all the work (or the oven being turned on the whole day). So if I wanted to take a recipe I've used before (like this brisket recipe), do I need to alter anything to make it work?

Also, can I make a soup in a slow cooker while I'm at work all day? I've never used one to actually make anything (just to reheat or to make something that's fairly simple), and I'd really like to.

The only thing I ever change is that if a recipe calls for water, I reduce it by one cup because I find the crockpot will add a lot of water on it's own through the steam condensing from the lid.

I make chicken soup in mine all the time, I just throw everything in put the lid on and leave it go all day. I generally use a chicken maryland, vegies and stock as well as garlic and flavourings I feel like at the time (not that many most of the time). Before I serve it O skim the bones out and just remind hubby that there may still be a bone or two.

I make beef stew in mine. Before work in the morning, toss in:
2 lb stew beef
1 lb mini carrots, cut in half
1 chopped onion
8 oz sliced mushrooms
4-6 cubed unpeeled red potatoes
1 32 oz carton beef broth
1 cup red wine
enough water to bring liquid to level that almost covers ingredients
salt and pepper to taste, I also add a healthy sprinkle of rosemary.

Cook on low all day, serve with cornbread.

I've plugged this blog so many times, but it's really become my go-to website for slow cooker questions. She's probably tried most anything you can think of and has a lot of tips and stuff.
