Jolly Roger Green tomato recipes

Before the frost last night, I picked a whole slew of green tomatoes last night. I just fried up one, by slicing it and powdering it in corn meal. I wasn't too impressed.

Does anyone have other recipes I should try or a 'better' fried green tomato recipe to suggest?

Well salt and pepper would have done a lot to add to the flavor. Did you fry them well? They should have a sweet/sour taste if they are fried, but I've found if you fry them too hot the batter gets crispy but the tomatoes won't be sweet.

Slice tomatoes, lay out slices on a baking sheet. Salt and pepper. Put a smidge of goat cheese on each slice. Slip under broiler for a few minutes until everything is hot and bubbly. Repeat daily until tomato supply runs out.

Enchiladas Verdes

Sauce
1 four oz can green chiles
16 oz green tomatoes
1 Zuccini if desired
1/4 cup heavy cream or half and half
1/2 cup milk
1 egg
1 t ground coriander
1 clove garlic
salt and pepper to taste

Blend all above ingredients together in blender.


Filling
3 chicken breasts cooked and shredded Or about three cups of leftover shredded chicken
4 oz Neufchatel cream cheese
2 T parmesan or Romano cheese
1 yellow squash chopped fine if desired
salt and pepper to taste

Mix all above ingredients together.

1 package Corn tortillas


Spray a 9 x 11 pan with cooking spray.

Spread 1/2 cup of sauce on bottom of pan. Line pan on top of sauce with 1 layer of corn tortillas (you can tear a tortilla in half to help fit). Spread ½ cup of sauce on top of tortillas. Spread 1/3 of filling on top of sauce. Repeat. Pour remaining sauce on top. Cover pan with foil. Bake in 375 degree oven for 45 minutes.

I made a chutney in high school with green tomatoes, which even got the seal of approval from my great grandmother. I can't recall exactly what flavour, but I know it was fruit one, but a quick search brings up a heaps of chutney recipes using green tomatoes.

Someone recommended a green tomato pie, I haven't tried it yet, but there are alot of recipes available online if you do a google search.

Start by sprinkling the sliced green tomatoes with salt and placing them on a rack to let some of the liquid drain first.

That helps.

Beach, I dredge my green tomates (not sliced too thin) in flour and fry in bacon drippings, salt n pepper to season. And, as blucanary noted, make sure they're good and done. You'll use the greenest of your tomatoes.

After thinking on it, I guess I'm not as strict on using bacon drippings as I was many years ago. Mostly, nowdays, I use shortening or vegetable oil. In fact, I don't bother even saving bacon drippings unless I'm preparing to use them for something specific. Funny, there was a period of time in my life, quite a long one, when I wouldn't think of throwing away good bacon drippings.

From about: Southern Foods

Green Tomato Rice

4 slices bacon, diced
1 bunch green onions, sliced, with most of green (6 to 8)
4 medium green tomatoes, peeled and chopped
1 jalapeno pepper, seeds removed, minced
1 clove garlic, minced
2 cups chicken broth
1 cup long-grain rice
dash dried leaf thyme and freshly ground black pepper, to taste
dash Tabasco sauce, optional
1/4 cup fresh grated Parmesan cheese, optional

Preparation:

In a medium saucepan, saute the bacon over medium heat until crisp; remove to paper towels to drain. In 1 tablespoon of the bacon drippings, saute green onions for 1 minute. Add green tomatoes and saute for 1 minute longer. Add garlic and jalapeno pepper; saute for another 30 seconds. Add the chicken broth, rice, thyme, pepper, and Tabasco sauce. Bring to a boil. Stir, reduce heat to low, cover, and simmer for 20 to 25 minutes, or until rice is tender and liquid is absorbed. Stir in Parmesan cheese just before serving, if desired. Sprinkle with the cooked bacon.

Damn. My friend just told me I always use bacon drippings. In my defense, other than the fact my brain is dying, I haven't made them since last year. She reminded me I always save bacon drippings for the fried green tomatoes. I guess she should know. For the past several years, everytime I make them, I'm making them for her.

Bacon drippings make everything taste better, even salads. So if you got 'em, I say use 'em.
