Chef Removing bitterness from cucumbers

Comment: Before adding a cucumber to a salad, have you ever heard of
cutting the rounded tip and rubbing it against the white flesh of the rest
of the cucumber to remove the bitterness? What is this about and does it
work?

Cucumbers are bitter? Maybe they need to select their veg more carefully.

This is a practice that's been passed down in my family. The OP doesn't describe the process well, at least not the way we do it. When you cut the tips off, you rub the at the cut point before throwing them. Serving them bathed in vinegar helps too.

And yes, cucumbers can be very bitter if they're not watered well during growth.

My mom always said that this removes the burps from the cucumber. Never works for me.

My mama would peel the cuke, and then scrape the sides with a fork, drawing little lines down the sides. She thought that this somehow scratched out the bitterness. I have no idea if it works or not; for my part, I don't bother. (Hell, I don't bother to peel 'em.)
