Seriously, though, I believe the idea of using Christian symbols against vampires was specific to Bram Stoker's Dracula, and it was reflective of the novel's theme that the human characters' belief in Christian faith and salvation was what gave them power over the vampires.

F. Paul Wilson had a bit of fun with the vampires/crosses bit. In The Keep, the bad guy is taken to be a vampire by the people in the area (he isn't, but that's what they think). The phony vampire pretends that the cross holds some power over him to a Jewish man, specifically to mess with that guy's real faith. The guy definitely had a crisis of faith over that.
He also wrote a book later on that was about vampires which followed every 'rule' of vampires - crosses, garlic, sunlight, and so on. Again, there is a Jewish character that has a bit of a crisis of faith because of this.
