Ah, it comes with recipes for Homemade Condensed Cream of Chicken Soup and Homemade Ranch Dressing so you can make it from scratch instead of the cans and packets. I'm definitely going to try this! Thanks, Algae.

ETA: I don't own a slow cooker so it'll have to cook slow in a dutch oven, ovenside, instead.

Tonight: A really thick burger grilled on a charcoal grill, on a toasted bun topped with with Swiss cheese, lettuce, tomato, Dijon mustard, and ketchup, and corn on the cob on the side. I was a little worried I might have overcooked the burger, but it actually came out pretty good.

Yesterday: I made a marinara sauce with the majority of the ingredients from either my own garden or the farmer's market, which I used on chicken Parmesan which turned out quite nicely. On the side I had a salad consisting of red leaf lettuce, spinach, tomato, cucumber, avocado, a little feta cheese, and a low fat vinaigrette dressing.

Tonight, filet mignon with bacon wrap, medium rare on the grill, and baked potatoes with butter and sour cream with chives. No veggie as that's more than enough food for us. It's Marty's birthday dinner.

BTW, the slow cooked pork chops turned out great and we have leftovers for tomorrow. Thanks again, Algae!

ETA: oh no. I just remembered, I forgot to make the birthday brownies! Bugger. I'll have to do a fast bake job when I get home.

tagurit, I'm glad you liked those pork chops. We found them delicious, too.

Last night was Chicken Enchiladas and Beefy Tacos (to satisfy my pregnant sister-in-law who couldn't decide which she wanted ) so tonight will be leftovers.

Mock cassoulet and raspberry-nectarine pie a la mode. I still haven't had real cassoulet and wish I had the wherewithal to attempt it. Maybe sometime in the winter when I think I need to cook for days to stay warm?

Half of a grilled multigrain tempeh reuben, with sauerkraut, vegan island dressing and smoked mozzarella. A cup of tomato, potato, yam, corn soup. A slice of lemon cloud pie.

Crab cakes with what Kroger refers to as 'Caldo Mix' veggies (red skinned potatoes, mini corn cobs, carrot coins, celery & pearl onions). I'm going to sprinkle some Old Bay into the boil water.

Tonight I cooked and ate beets for the first time in my life. A Facebook friend of mine had posted some recipes extolling their virtues, and I'd seen beets at the farmer's market, so I figured I'd try them. I roasted them for an hour at 400 F, yet they were still tough and the skins didn't peel off easily. I managed to chop up what I could and made a salad with kale, chickpeas, carrots, green peppers, mozzarella cheese, and flax seed.

The beets tasted familiar, like something I associate with Thanksgiving or Christmas dinner, so I wonder if I had them when I was a kid and just didn't know what they were. They sure are messy, though.

I've read that wearing gloves helps with beets. I don't know; they're so much more convenient in the can.

Tonight it's just tortellini out of a package. But last night it was grilled flank steak with cilantro-mint chimichurri. I'll go lighter on the oil in the chimichurri next time, but there will most definitely be a next time.

Assuming you mean beetroot (dark red), I find they are better boiled as the skins peel away nicely. I've tried roasting other types of beet - turnip and swede - but it rarely makes them soft enough so I part-boil, then wrap them in foil and roast. In general, the various types of beet don't seem to roast twell unless foil wrapped to keep in moisture and soften the skin.
